Still have no clue how they make that ? , ancient Chinese secret for real
lady that lives next door to my grandfather's old house used to make us mambo sauce and just bring it next door...Boudin's. Crawfish. King cakes. Jambalya. Gumbo. These are just a few of the things I couldn't get when I was out of state. I remember being in D.C. and a ? couldn't find a box of grits. ? was baffling.
? you can easily find Grits in DC...some of the food being named though isn't region specific...especially some of the food found in Texas that's just straight up spanish food -

Chicago is a immagrant city so it's hard to pinpoint. They did have a show on WTTW here in the Chi about the different foods that sprung up from immagration

yeah...like Ms. S mentioning Tex-Mex...that's not Texas (american) food that's Mexican food they brought there or have been cooking there for years when Texas was still Mexico -

Tex-Mex is different than tradiational Mexican food... it has to do with the spices used and cheeses so yes it originated in Texas along with the other items I listed. Pecan Pie is the only thing debatable ... some say the French invented it. Folks from Texas say otherwise. -
