MediumI used to drown my well done in steak sauce. When you go into the medium rare- medium well range sauce isn't even needed.

no. It's just as I told you: Decades ago the average American didn't eat rare like that. Truthfully, neither did a lot of Europeans. The French pretty much led the world to ever increasingly raw beef and lamb. They kept moving the goalposts and Europe followed suit, then we did.

It does matter though. That's why they all have different temps for food to be done
