Medium RareA compromise: 145°F internal temp is safe to eat for a steak, which is above medium rare but still not well done. Food safety wise, there is absolutely no need to raise the temp even more and sacrifice tenderness and flavor just to 'get all the pink out'.
Also, let that ? rest before cutting into it. -

Cooking a steak well done is like winning the lotto and building a mansion in the middle of Montana. What's the point? Dont know how anyone can equate red meat on a steak to that of a burger or a chicken. I'd never eat that thing Blue, tho. That's just playing Russian Roulette with your life.
One of my boys does this. We went to Olive Garden last week. He ordered a Tuscan Sirloin well done and asked for a bottle of ketchup. He soaked that ? in it like a sponge. I looked at him like...Our Commander-in-Chief eats his steak well-done with ketchup.
